If you’ve ever doubted that vegan pizza could be delicious, you need to try this one! By popular vote, it has been proclaimed “The Best Vegan Pizza Ever!”
INGREDIENTS:
1/4 ounce active dry yeast
1 cup warm water (about 115F)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon sugar
3 cups all-purpose flour
TOPPINGS:
2 cups of your favorite tomato sauce
1 medium-sized zucchini
4 ounces of crimini mushrooms
1 medium red pepper
1 medium red onion
6 ounces shredded vegan cheese of your choice (Daiya brand worked perfectly in this recipe)
DIRECTIONS:
1. Mix yeast and water in a large bowl. Add the oil, salt, sugar, and 2 cups flour. Mix well until all ingredients are combined well. Add remaining flour (as needed) to form a soft dough.
2. Remove from the bowl to a well-floured surface. Knead for about 10 minutes, until the dough is smooth and elastic. Place in a greased bowl. Cover and let rest in a warm place for 15 minutes.
3. In the meantime, divide the dough in half. Roll each half into a circle. Transfer into two 12-inch greased pizza pans;
4. Bake at 375° for 15 minutes. Take out of the oven and spread 1 cup of tomato sauce over each crust; top with cheese, sliced mushrooms, red pepper strips, sliced zucchini, and onion rings. Bake until the cheese melts.
