Raw Goji Berry Coconut Pudding

You have to try this yummy, raw dessert!

 

INGREDIENTS:

2  young coconuts

1/4 cup organic Goji berries

2 tsp of organic vanilla extract

1 Tbs  of organic agave syrup or a sweetener of your choice (honey works great)

pinch of sea salt

 

DIRECTIONS:

Add meat of 2 young coconuts and 1 cup of coconut water and 1/4 cup of Goji berries to a high speed blender. Add 1 tsp of vanilla extract, pinch of sea salt and the sweetener. Blend until very smooth. Decorate with Goji berries and cacao nibs. Refrigerate for 30 minutes before serving.
